Question
In fardh salah can you recite a different riwayah in different rakah and can you also recite surah fatiha and surah differently in 1 rakah.

also after surah fatiha if you start a surah in the middle, do you have to recite bismillah if you are reciting khalaf an hamzah min shatibiyyah?

Answer
Yes, you can recite with a different riwaayah in each raka'h.  You can also recite the Faatihah in a different riwaayah than what you recite after the Faatihah, but when leading others, we would recommend reading the same riwaayah in the Faatihah as you do in the raka'h, to avoid confusing those following in the prayer.

It is not required to recite the basmalah when starting in the middle of a surah for any qira'aah or riwaayah, including Khalaf and Khallaad.
